Once you have entered all relevant criteria is it possible to delete criteria that may have been entered accidentally?

Yes, the environmental standards are saved in the reference table zRef_Environmental_Standards. You can view this table under "All Tables", and you can filter for and delete any data you wish in the normal manner (ie use the data toolbar (left) to enter edit mode, select the rows or the whole sheet and press Delete, or right click-delete).
