The export from ESdat to ESlog is controlled by a pair of files

XXFileName.ESlog    (contains the layout)

XXFileName.png      (contains the logo)

The data will be populated from ESdat into the .ESlog file using ESdat_Logs.gedts (SQL Server) or ESdat_Logs.gedta (Access).  The same gedt file is used for all ESlog exports by default, and is typically used from the installation folder.  A custom version can be stored in your Templates folder if a custom version is needed.  It is possible to use a different gedt file if needed for a specific ESlog export by creating a custom gedt file, of the same name as the layout file (for example XXExport1.gedts to match the ESlog file XXExport1.ESlog)
